Elderberry Syrup (Sugar)
An Elderberry Syrup recipe that is highly adjustable from Elderberry Edge Farm. This works for whatever amount of elderberries you harvest. Prep time is listed 22, however that is assuming you have the berries already in juice form. Allow longer if you are coming straight from the field. - 1 cup elderberry juice
- 3/4 cup sugar
- 2 teaspoons lemon juice
Measure 1 cup of elderberry juice and place in non reactive pan.
Add 3/4 cup sugar for EVERY cup of juice in pan and 2 teaspoon of lemon juice for EVERY cup of juice in pan.
Boil briefly to mix sugar, cool and bottle.
To home can your syrup, do not cool, bottle when hot in sterilized heated canning jars and boil in hot water bath for 10 minutes.
